Feed My Face Friday…Korean BBQ Meatballs

Hiya! Welcome to the first of many Feed My Face Fridays! If you are anything like my friends and I, feeding your face is one of your favorite pastimes, and something you do very well! LOL, honestly at this point we could be Olympic medalists taking home the gold!

With this recipe, you could definitely soothe your meat-lust, and impress others with your culturally diverse palate. These meatballs are great as a main entrée or an exciting hors d’oeuvres at your next get together. I personally quickly whip them up for my boyfriend who is half man/half carnivore, or my god-kids who inhale everything!

Ingredients:

Serves:2-4ppl

Meatballs

  • 1Lbs Ground Beef or Turkey
  • 2 Garlic Cloves-minced
  • 1/2 Onion- grated
  • 1 Egg
  • 1/4 cup Bread crumbs
  • 1 Tbsp. Dried Parsley
  • 1/4 Tsp. Pepper
  • 1 Tsp. Salt

Korean BBQ Sauce

  • 1/4 cup Brown Sugar
  • 1/4 cup Soy Sauce
  • 1/2 Tsp. Crushed Red-Pepper Flakes
  • 1/4 Tsp. Ground Ginger or finely minced if using fresh
  • 1/2 Tsp. Oil ( Coconut, Olive, 0r Canola)

Preheat the oven to 375°. In a large mixing bowl combine all Meatball ingredients in a large mixing bowl. USE YOUR HANDS! Its totally fine to get a little messy sometimes sweetie. I find that trying to mix together all the ingredients with a spoon just doesn’t cut it!

Form balls out of the mixture, you can do any size from jumbo to mini. Place on a cookie sheet (spaced out evenly) and bake until golden brown, about 20-25 minutes for medium sized balls. At this point I always cut open the Ugly Ball to double check that they are cooked all the way through. (The Ugly Ball is that extra meatball that is… well ugly… its not perfectly round and a little wonky looking) Once done baking, allow meatball to rest for about 5-10 minutes.

Now for the sauce. In a medium sauce pan on medium heat, combine Oil and Crushed Red Pepper Flake, Cook for 1-2 minutes, then add remaining ingredients and stir to well combined. Allow sauce to cook for another 1 minute to thicken. Then add meatballs to sauce, toss to cover. This sauce is potent, so a little goes a long way!

Serve with your favorite sides or on a tray with mini fork… and of course, don’t be afraid to Feed Your Face!
