Feed My Face Friday…Baked Cheese Grits with Veggie Eggs

Rise and Shine! Good Morning! Happy Saturday!

LOL, don’t you just LOVE Morning People! So much energy way too early in the am! But my co-worker doesn’t call me Sunshine for no reason!

This week I figured I would share some of my breakfast creations. Every man I have ever dated has raved about how I can whip up amazingly quick breakfast feast with just a few ingredients. And y’all know how I like to feed my men! Nothing says I love you more than a big o’ plate of home cooked goodness! So use this recipe to show love to yourself and your love ones!

So put on your favorite Saturday morning playlist (90’s R&B takes me to my happy place) and let’s get cooking!

Serves: 2-4ppl


  • 6 Eggs
  • 1 1/2 Cups of Cooked Grits
  • 2 Tbsp of Butter
  • 2 Cups of Shredded Cheese ( Use Cheddar, Pepper Jack, Gouda, Whatever you want)
  • 2 Cups of Milk ( 1 1/2 for Grits, Reserve 1/2 Cup for eggs)
  • 1 Minced Jalapeno
  • 1/2 Cup of Cooked Bacon Bits
  • 1/2 Diced Onion
  • 3-4 Diced Mushrooms
  • 1/2 Diced Green Pepper
  • Garlic Salt
  • Ground Pepper
  • Ground Onion Powder
  • Hot Sauce
  • Cooking Oil

Preheat oven to 375°.  Prepare Grit per packaging. Set aside to cool. Dice and Mince Veggies.

In a large mixing bowl, Combine Grits, Shredded Cheese, Minced Jalapeno, Bacon, and Butter. In a smaller mixing bowl, beat together 2 Eggs and 1 1/2 Cups of Milk. Add Milk/Egg mixture to Combined Grits, mix until well combined. ( This takes a bit of elbow grease… I count this as a work out!) Season with Garlic Salt and  Ground Pepper, about 1/2 Tsp of each.


Pour into baking dish. ( I feel it doesn’t matter the size, whatever you have at the house that will hold the mixture… I mean really who’s actually looking at your bake ware!) Place in the over and bake for 45 mins or until golden brown. Allow to cool for 10 mins to let it set.

In a small mixing bowl, beat together 4 Eggs, 1/2 Cup of Milk, and about 1 Tsp of Garlic salt, Ground Pepper, Onion Powder, and 2 dashes of Hot Sauce.


In a large skillet on medium heat, add Cooking Oil to coat pan. Add Diced Onion, Green Pepper, and Mushrooms. Saute until soft. Pour in Egg mixture, and gently fold until eggs are soft and fluffy.


Plate and enjoy!
